Clamburgers

From a recipe printed in the June 1976 Ruralite magazine.

 

1 can (7 oz) minced clams

1 egg, beaten

1 tablespoon lemon juice

1 tablespoon chopped parsley

½ teaspoon salt

dash pepper

½ cup dry bread crumbs

6 large buns

1 tablespoon grated onion

 

Combine all ingredients except crumbs and buns. Form into six cakes, roll in crumbs. Fry in fat in heavy frying pan at moderate heat until brown, turning carefully. Cooking time is about 10 minutes. Serve in toasted buns. Makes 6.

 

Note: Some of our residents will remember receiving the Ruralite magazine in the mail in the “old” days. It was published in Oregon for consumers of participating electric systems, which included MEA> Many of the articles were about Alaskans, and life in this great state.
