Thai Red Curry Coconut Salmon Soup

Step one

In baking pan place your salmon fillet skin side down. Smear over the top of the salmon abut ½ cup to 2/3 cup of coconut cream. This is the asian coconut cream not the stuff used for bar drinks. Place salmon in oven and bake till salmon is flakey and done. Usually about 15-20 minutes for an 8oz fillet. At 400 degrees Use two 8 ounce portions for the soup if you want lots of salmon add another fillet. More time will be needed for larger amounts of salmon

 

In large stock pot combine the following:

2 cans of coconut milk

Remainder of coconut cream from salmon baking

3 cups of chicken broth or fish stock (I prefer to use chicken as it keeps it from tasting too fishy)

1 can of coconut juice 20 ounces This is actually a beverage that is drunk like juice

 

Bring to a boil then add:

½ cup green onions chopped

3 tbsp fish sauce

2-5 tbsp red Thai curry paste. (This is a taste thing and it will be spicier the larger the amount you use of it. Extra paste can be frozen in a plastic baggy for later use)

2 tbsp brown sugar

1 tbsp finely chopped fresh garlic

1 tsp lemon grass paste or 1 tbsp lemon grass finely/very finely chopped

1 small red pepper sweet bell finely chopped

salt and pepper to taste

 

Reduce heat and simmer until slightly thickened.

Add 1 to 1/12 cups cooked rice. If you plan on eating it right away, use the larger amount of rice. If it is going to be served at a later meal or from a crock pot use the smaller, as the rice will continue to soak up liquid. To thin it add coconut milk and stock in equal amounts.

Flake fish into chunks...not fine like for salad but with some size. Gently stir into soup. If the fish is too finely flaked it will turn to mush and break up making a creamy soup with little fish substance. Stir just enough to combine. Heat till fish is back to service temperature then remove and serve. To reheat it best to use microwave as stove top is easy to scorch or burn if let unattended and stirring breaks up the fish too much

Walmart Superstores carry the coconut milk, coconut cream and coconut juice in their Asian section. You can also visit Red Apple Grocery in Mt. View, which has a goodly selection of all things Asian. Carrs/Safeway has lemongrass paste in the fresh herb section by the mushrooms generally. Red curry paste comes in little cans in a variety of curry types, red, green and yellow and several dish specific.

Hope you have fun with the soup. You can also use halibut or rock cod as well. Just remember not to over stir the soup so the fish breaks up too much.
