Molded tomato - cabbage slaw

Published:

1 envelope unflavored gelatin
2 cups tomato juice
2 cups shredded cabbage
1 tablespoon lemon juice
Salt, pepper and seasoning to taste

SOFTEN gelatin in ½ cup tomato juice
BRING remaining juice to a full boil
REMOVE from heat
ADD gelatin
STIR until completely dissolved
SEASON as desired
CHILL to consistency of egg white
STIR in cabbage
TURN into mold
CHILL until firm
SERVE with salad dressing seasoned with garlic or celery salt to taste.
Serves six.
