Marshmallow Sweet Potatoes Deluxe
Recipe from cookbook “Out of Alaska’s Kitchens” published by the Alaska Crippled Children’s Association in 1951.
8 medium sweet potatoes
2 tablespoons butter
½ cup hot milk
½ teaspoon salt
1 teaspoon cinnamon or nutmeg
¼ teaspoon paprika
1 cup chopped walnuts
½ pound marshmallows
Cook sweet potatoes until tender, remove skins and mash. Add butter, milk, salt, cinnamon or nutmeg and paprika. Beat until free from lumps and light and fluffy.
Fold in walnuts. Turn into a greased casserole, cover with marshmallows and bake in moderate oven at 350 degrees until mixture is heated through and marshmallows are brown. Serves eight.
