Mooseburger Pie

The following recipe by Mary Brinson was printed in the Knik Arm Courier in June 1960. Mary Brinson was born in Ketchikan, but moved to Chugiak in 1956. Her husband and five children and 15 sled dogs were involved in mushing, but mary also loved to cook and stew.

 

CRUST:

½ cup tomato sauce

½ cup bread crumbs

1 pound mooseburger

¼ cup chopped onion

¼ cup chopped green pepper

½ teaspoon salt

1/8 teaspoon pepper

Combine and mix well. Pat mixture into a 9-inch pie plate, flute edges and set aside.

 

FILLING:

1 1/3 cup minute rice

1 cup water

½ teaspoon salt

½ cup tomato sauce

1 cup grated cheddar cheese

Combine rice, tomato sauce, salt, water and ¼ cup cheese. Spoon into shell and cover with aluminum foil. Bake at 350 degrees for 25 minutes. Uncover and sprinkle top with remaining cheese. Bake uncovered 10 to 15 minutes more. Cut into wedges. Serves 5 or 6.
