Saucy Green Beans

Recipe from ‘Something Special Alaska Style,’ published by Chugiak Elementary PTA in the 1950s.

 

1 ½ pounds fresh green beans

1 teaspoon salt

½ pound bacon

2 eggs

1/3 cup vinegar

½ cup water

3 tablespoons sugar

1 cup bread cubes (2 slices)

2 tablespoons oleo

 

Boil beans for 20 minutes and drain. Cook bacon until crisp. Remove from pan. Beat eggs. Add water, vinegar, sugar and salt. Stir into bacon grease.

Cook over low heat until thickened. Saute bread in oleo until golden. Pour sauce over beans and add bread cubes and bacon.
