Trail’s End Shortcake

Make a fruit cake dough by simply adding 2 tablespoons of sugar and 2 tablespoons cooking oil to your favorite biscuit recipe mix before baking. Flatten dough gently until about ½ to ¾ of an inch thick. Place dough in the center of a large piece of heavy duty aluminum foil. Fold foil over dough loosely to make a large “jacket” for it. It must be air tight. Bake on charcoal grill or camp stove (or even the ashes of a fireplace or campfire). After about 15 minutes, turn the package over carefully and bake for another 10 minutes. Open package and if shortcake is done and lightly browned it is ready to break into large pieces. After breaking, split each piece and serve with your choice of berries (crushed or not as your please) sugar and cream.

This is a good one to bake while you are camping because you will have the fresh fruit right there — just waiting to be picked for your shortcake.
