Cabbage Rolls with Moose
From “Out of Alaska’s Kitchens” by the Alaska Crippled Children’s Association, Territorial Headquarters, 1951.
Ground one pound of moose or sheep meat and season with salt, pepper and garlic. Add chopped pepper and one small onion. Pack together in a ball with leftover rice, breadcrumbs or enough flour to hold the mixture together. Wrap each in a cabbage leaf and pin together with a toothpick. Drop into boiling water and cook 20 minutes or until meat is done. Makes six cabbage rolls.
