Pun-kin pie muffins

From the Magic Bus Bakery Cookbook by the late Melinda Nash, who operated her bakery from a converted bus at the entrance to Denali Park in the late 1980s.

Mix together: 1 cup all purpose flour, 1 cup packaged brown sugar, 1 tablespoon baking powder, 1 teaspoon baking soda, ½ teaspoon salt, 2 teaspoons cinnamon, 1 teaspoon ginger, ½ teaspoon cloves and ½ teaspoon nutmeg.

Mix together: 1 ½ cup canned pumpkin, 1 cup oil, 1 cup milk, 4 eggs (lightly beaten), ¼ cup honey

Combine mixtures and stir just until moist. For variety, add 1 cup chopped nuts, raisins or dates.

Scoop into muffin pans and bake at 400 degrees for 20-25 minutes. Makes 12 LARGE muffins.
