Apple pudding

Recipe from a 1951 cookbook, “Out of Alaska’s Kitchens,” published by members of the Alaska Crippled Children’s Association. A treasure trove of recipes of a simpler time using basic ingredients.

 

Beat 1 egg

Add 1 cup milk

1 tablespoon melted butter or other shortening

Add 2 cups flour, sifted

2 level teaspoons baking powder

and a pinch of salt, sifted together

 

Mix well and spread into a greased shallow pan. Press into the batter as many apples (quartered) as you desire. Cover top with ½ cup brown sugar, 1 teaspoon cinnamon and 2 (or more) tablespoons melted butter.

 

Bake at 350 degrees for about 45 minutes. Serve with cream or any sweet sauce.
