Venezuelan Baked Corn

This recipe is from excellent cook Margaret Swanson, who lived in Chugiak many years until she passed away in 2006. She was the wife of the Chugiak postmaster Paul Swanson.

 

Cook one small minced onion in 2 tablespoons of butter for five minutes.

 

Blend in:

2 tbls. Flour

2 tbls. Brown sugar

1 tsp. salt

½ tsp. pepper

½ tsp. nutmeg

Add: 1 cup of milk and cook, stirring until thickened

 

Into a bowl, beat two eggs and then stir in above ingredients. Add 2 cups cooked corn and mix well.

Pour into a 9” shallow pan. Bake 45 minutes at 325 degrees.

Makes 4-6 servings.
