Pumpkin donuts

Recipes from our local residents — some present, some that have passed on.

3 tablespoons margarine, softened

1 cup sugar

3 eggs, beaten lightly

1 cup canned pumpkin

2 ¾ cups sifted flour

1 teaspoon salt

½ teaspoon nutmeg

½ teaspoon cinnamon

4 teaspoons baking powder


Cream shortening with butter. Add pumpkin and eggs and mix. Combine dry ingredients separately and add to pumpkin mixture. Chill dough until firm (an hour or longer). Pat into ½ inch thickness. Cut and fry in deep fat at 365 degrees until golden brown.


May be either coated with powder sugar, iced or finished with your favorite topping.
