Baked Alaska Pie

1 9-inch baked pie shell

16 large marshmallows

1 tablespoon water or canned pineapple juice

2 eggs

1 quart firm vanilla, peach or pistachio ice cream

¼ cup granulated sugar

¼ teaspoon salt

2 cups chilled, fresh raspberries or drained, thawed frozen berries


Refrigerate pie shell until well chilled. Preheat broiler 10 minutes over low heat. Heat marshmallows with water, folding constantly, until melted. Beat egg whites until quite stiff, then fold in marshmallow mixture to make meringue. Sprinkle 1 cup berries into pie shell. Fill with ice cream, top with meringue. Be sure ice cream is completely covered and spread to edge of pie. Broil several inches below heat until lightly brown. Serve at once.
