Quick Fruit Cobbler

From the Homer Homemakers Cookbook


½ cup milk

1 teaspoon oil or melted shortening

1 1/2 cups sugar

1 cup pancake mix

2 cups berries

1 cup water


Mix milk, oil, ½ cup sugar and pancake mix and put into a greased 2 quart casserole. Mix berries, water and remaining sugar and pour over batter. Bake at 375 degrees for about 45 minutes. If using canned or frozen sweetened fruit, omit sugar and use juice in place of water. Very good with raspberries.
