Corn pudding

Recipe is from a newspaper clipping that was found tucked inside a cookbook that was handed down from Jinny Kirk’s mother. There was no date on the clipping.


2 tablespoons butter or oleo

2 tablespoons chopped green pepper

1 small onion, chopped

2 cups cooked corn

1 pimento (or jarred pimento)

1 teaspoon salt

1/8 teaspoon pepper

3 eggs, beaten

2 cups milk


Melt butter in a saucepan. Add green pepper and onion. Cook slowly for five minutes. Add remaining ingredients. Mix well. Pour into a casserole, set in a pan of warm water. Bake in a moderate oven at 350 degrees for 1 hour, 15 minutes or until inserted knife comes out clean. Makes six servings.
