Cheese corn bread

Recipe is from a newspaper clipping that was found tucked inside a cookbook that was handed down from Jinny Kirk’s mother. There was no date on the clipping.


1 cup sifted flour

1 tablespoon sugar

1 ½ teaspoons salt

2 teaspoons baking powder

1 egg, beaten

2 ½ cups cooked corn

½ cup grated American cheddar cheese

¼ cup melted shortening


Mix and sift flour, sugar, salt and baking powder. Combine egg, corn, cheese and shortening. Stir into dry ingredients. Bake in a greased square pan (8x8x2) at 400 degrees for 35 minutes.
