Mooseburger meat loaf

Recipe from 1951 cookbook, “Our of Alaska’s Kitchens,” produced by members of Alaska Crippled Children’s Association, Territory of Alaska. 2 pounds mooseburger


2 eggs

1 cup ground dry bread crumbs

2 or 3 large onions, ground

½ cup diced celery or 3 tablespoons dried celery tops

2 ½ cups evaporated milk

1 ½ teaspoons salt

¼ teaspoon pepper

2 cloves minced garlic

2 teaspoons celery salt

1 teaspoon mustard

¼ teaspoon sage or 1/8 teaspoon thyme

3 or 4 slices of bacon


Combine meat with other ingredients, using enough milk to that the mixture is very soft. Place in large deep pan, pressing down well.

Since this is a completely unorthodox loaf, make no attempt to have it hold its shape.

Lay strips of bacon across the top. Cover and bake in a moderate oven at 350 degrees for 2 to 2 ½ hours. Uncover the last half hour to brown.

This loaf is delicious hot or cold and makes grand sandwiches. Warm over by browning lightly in bacon drippings.
