Date Loaf Cake

Recipe from Charlene Hughes. Published in the Chugiak Elementary PTA cookbook, “Something Special.”


1 pound dates, cut up in a bowl that you can cover. Sprinkle 2 teaspoons of soda over the dates. Add 2 cups boiling water. Cover and let stand until mixture is cool.

Cream 1 cup Crisco, 2 cups sugar and 2 eggs. Add date mixture. Sift 3 cups flour, 1 teaspoon of cinnamon and 1 teaspoon of Allspice. A little more flour may have to be added to make dough stiffer.

Bake in loaf pans or in one large tube pan. You can add nuts to the batter or any fruit you like. For Thanksgiving and Christmas, I add nuts, chopped pineapple and cherries for color, which makes a delicious fruit cake.

Can be baked in small aluminum pans and after cooled, can be wrapped or frozen for later use.

Bake at 350 degrees for about two hours. Test with toothpick.
